Like many of you, I get tired of cooking the same meals week after week. I love when I find new healthy recipes that the whole family enjoys. Not an easy task considering my husband, our two teenagers and myself all have different taste in food.
I am not a vegetarian nor a vegan.. but I have lost my appetite for most meats. I didn’t know there was a “label” for someone who eats the way I do. But isn’t there a label for everything nowadays? 🙂 As far as I can tell.. I eat a plant-based diet. 🌱
A person following a plant-based diet is not automatically vegan nor vegetarian.
According to Forks Over Knives, a plant-based diet is […based on fruits, vegetables, tubers, whole grains, and legumes; and it excludes or minimizes meat (including chicken and fish), dairy products, and eggs, as well as highly refined foods like bleached flour, refined sugar, and oil.]
My neighbour let me borrow her recipe book.. loved it so much bought my own!!! I have enjoyed each new recipe I have tried so far in the Oh She Glows cookbook by Angela Liddon. The recipes in here are easy and tasty. Food is fun again!! 😍

Effortless Vegan Overnight Oats. I was so hungry I only took time to add raspberry and a dab of honey between the layers. Next time I will add more granola and some nuts or seeds. Both my teenagers and my husband enjoyed this. Winner!💪
10-spice vegetarian soup. I improvised a bit. It was good freshly made. But the whole family agrees that it was way better warmed-up the next day.

I work at a daycare which is a nut 🥜 free environment. A friend introduced me to this wonder.. WowButter. It is a replacement for peanut butter. It even has stickers to put on your lunch containers. It tastes delicious.
Lunch idea derived from a Pinterest post. These ingredients were meant to be in a taco topped with guacamole. I did not have tacos. No avocados either (no guacamole). Made my own refried black beans (1st time ever). I used nacho chips layered with spinach, bell peppers and cheese. Love it. ❤️
It’s always a good time for a healthy snack. Plain Greek yogurt with pumpkin seeds, nuts of your choice and drizzled with honey. 🍯
Mixed greens salad w. dried cranberries, slices almonds and feta cheese. Beef chilli w. plain Greek yogurt and cheese topping. 🍴
I discovered sweet potato toast. Cut a sweet potato in slices, toast. Then add whatever toppings you want to enjoy.
